Pretty in Purple Coleslaw!

I’m very easy when it comes to food, all I want is to satisfy my belly, excite my taste buds, nourish my cells and please my eyes, all without having to spend hours in the kitchen! This ‘Pretty in Purple Coleslaw’ ticks all the boxes and it only takes about 5 minutes to make, depending on how fast you can shred your cabbage…

Pretty in Purple Coleslaw

I love seeing people’s faces when I put an unusually colorful dish on the dining table! Purple definitely gets the most “WOWs”. 

On top of that, red cabbage is even more nutritious than the green variety. It is very low in calories (roughly 44 calories per 1CUP), high in Vitamin K and C and has a low GI.  Red Cabbage is claimed to have outstanding benefits in terms of cancer prevention, is remarkable in antioxidant richness, as well as anti-inflammatory richness. Purple in Pretty Coleslaw

Ingredients: red cabbage, lemon, mustard, dairy free yogurt, onion, coriander, chives, (salt & pepper)

Coleslaw is traditionally made with white cabbage, carrots, onions and mayonnaise.  I’ve seen people adding apples, walnuts and even cranberries into their cabbage! I personally like this version because it’s simple, not much shredding and the hearty taste of cabbage really stands out. Did I mention that I absolutely adore the taste of fresh coriander! It was so good I ended up eating it by itself with a big spoon! Ideally though, you use it as a topping for your veggie burgers, with falafels, chips or mashed potatoes

Ingredients
  1. 1/3 red cabbage (about 2Cups when shredded)
  2. 1/3 red onion (shredded)
  3. 3 TBSP dairy free yogurt (I used Alpro soya)
  4. 1/2 lemon (juice)
  5. 1 tsp mustard
  6. 1/3C fresh coriander (finely chopped)
  7. pinch of salt and pepper (to taste)
Instructions
  1. finely shred cabbage
  2. finely shred onion
  3. mix yogurt with mustard and lemon juice
  4. add to cabbage and onion
  5. mix in finely chopped coriander
  6. (add pinch of salt and pepper)
  7. dig in!
Notes
  1. Optional: Sprinkle with finely chopped fresh chives

    This is just sooo pretty Petra! I absolutely LOVE the purple and love red cabbage as well. I love the crunch factor and agree…love simple meals as you know and I love how simple this salad is! It’s such a bonus when something is both beautiful, easy and delicious!

      Thank you so much Brandi, I made this to have with falafels but then kept eating it by itself it was so good. And that’s coming from a not so savoury person. Mixing the cabbage with yogurt gives it such a beautiful light purple colour! Simple yet nourishing, thank you! x

  • I love coleslaw (shocker since it’s not sweet ;)) and I just love staring at this beautiful bed of purple cabbage perfection! You’re really rocking the creamy but oil free dressing here too! Mustard and lemon are a must in just about every dressing. Mayo grosses me out entirely, but non-dairy yogurt sounds perfect. Plus it would add a little extra tang 🙂 Power to the purple foods!
